Ingredients

Base

  • 200g digestive biscuits (crushed)
  • 100g unsalted butter (melted)

Filling

  • 500g cream cheese (softened)
  • 150g caster sugar
  • 3 large eggs
  • 1 tsp vanilla extract

Ganache and Decoration

  • 200g dark chocolate (chopped)
  • 200ml double cream
  • 50g white chocolate (melted)

Instructions

  1. Preheat Oven: Preheat your oven to 160°C (140°C fan).
  2. Prepare Base: Mix crushed digestive biscuits with melted unsalted butter until combined. Press this mixture evenly into the base of a springform tin and chill in the refrigerator to set.
  3. Make Filling: Beat softened cream cheese, caster sugar, and vanilla extract together until smooth. Add eggs one at a time, mixing well after each addition to ensure a creamy batter.
  4. Bake Cheesecake: Pour the filling over the prepared biscuit base. Bake in the preheated oven for 40 minutes, then remove and allow to cool completely.
  5. Prepare Ganache: Heat double cream gently until just about to boil, then pour over chopped dark chocolate. Stir until the chocolate is fully melted and the ganache is smooth.
  6. Decorate Cheesecake: Spread the chocolate ganache evenly over the cooled cheesecake. Pipe melted white chocolate in a spiral pattern on top, then drag a knife through it from the center outward to create a spider web effect.
  7. Chill and Serve: Refrigerate the decorated cheesecake for at least 2 hours before serving to allow it to set properly.
