Instructions

  1. Prepare Dry Ingredients: In a medium bowl, whisk together the all purpose flour, baking powder, salt, and pumpkin pie spice until evenly combined.
  2. Mix Wet Ingredients: In a separate bowl, whisk together the nonfat Greek yogurt, unsweetened pumpkin puree, eggs, vanilla extract, and unsweetened milk until smooth.
  3. Combine Batter: Pour the wet ingredients into the dry ingredients and whisk everything together until you have a smooth, uniform batter with no lumps.
  4. Heat Skillet: Spray a non-stick skillet with cooking spray and heat it over medium-high heat until hot.
