These no-bake lemon poppyseed protein balls are a refreshing and convenient snack packed with vanilla bean protein, oats, and zesty lemon flavor. Easy to prepare in just 15 minutes, they combine the crunch of poppy seeds with the tang of fresh lemon juice and zest, making them perfect for a healthy energy boost anytime.

Ingredients

Dry Ingredients

  • 3 scoops vanilla bean protein powder (90 g)
  • 1/2 cup rolled oats (50 g)
  • 1 tablespoon poppy seeds (9 g)
  • 1/2 tablespoon Truvia sweetener (7 g)
  • 1 teaspoon lemon zest, freshly grated (from about one medium lemon)

Wet Ingredients

  • 6 tablespoons fresh lemon juice (90 ml, from about two medium lemons)
  • 6 tablespoons water (90 ml)

Instructions

  1. Mix Dry Ingredients: In a large bowl, combine the vanilla bean protein powder, rolled oats, poppy seeds, Truvia sweetener, and freshly grated lemon zest. Stir thoroughly until all dry ingredients are evenly mixed and distributed to ensure balanced flavor and texture in each bite.
  2. Add Wet Ingredients: Pour the fresh lemon juice and water into the bowl with the dry mixture. Stir continuously until the ingredients are fully incorporated and the mixture forms a cohesive dough that is moist enough to hold together but not overly sticky.
  3. Shape the Mixture into Spheres: Using your hands, form the mixture into 28 small, evenly sized spheres for consistent servings. To prevent sticking, lightly wet your hands with water as needed while shaping the protein balls.
  4. Store the Lemon Poppy Seed Bites: Arrange the formed protein balls in a Tupperware container with enough space so they do not stick together. Seal the container tightly and refrigerate to allow the balls to set. Keep refrigerated until ready to enjoy this refreshing snack.

Notes

  • Lightly coat your hands with water or a small amount of coconut oil to prevent sticking while shaping the balls.
  • You can substitute Truvia with other sweeteners like stevia or honey but adjust the quantity accordingly.
  • For added texture, consider mixing in a tablespoon of chopped nuts or seeds.
  • Store in the refrigerator for up to one week or freeze for longer storage.
  • Use fresh lemon zest and juice for the best flavor and aroma.
